Quilts, cleaning and potatoes

I’ve been super busy working on both a customer order and prepping my studio for a niece’s upcoming visit.

This afternoon I start a huge annual canning project. Every year I can potatoes in the fall. It’s labor intensive and by the time I’m done at the end of the month (or early December), I’ll have put up at least 150# to go through until next fall for the family.

Why do I do that? Well, first, I love to can. In spite of being forced to help as a child, I’ve come to love the process and result. Also, canned potatoes are perfect for those nights when supper is running late (or I’m running late) as they’re already fully cooked. And as I buy in bulk, it’s cost effective for us. An added bonus is that I know exactly what’s in that jar and can adjust things like sodium to my family’s needs when I can them.

I do ONLY follow approved recipes from either Ball/Bernardin or the National Center for Home Food Preservation as I will not play russian roulette with rebel canning. And I recommend that to everyone I guide into home canning and food preservation.

  1. And I’m glad you said that about the recipes. I probably shouldn’t try that Christmas Jam – it didn’t come from one of those two places you mentioned. And wow! You got a LOT done in your studio! Yay You!!
